Ingredients

- 2 teaspoons olive oil
- 1 large onion, chopped
- 2 cups broccoli florets
- 1/4 cup water
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 1 small zucchini, halved lengthwise and cut into 1-inch pieces
- 1 cup sugar snap pea
- 10 ounces lean boneless lamb loin, cut into 1/4-inch strips
- 1 teaspoon thyme
- 1/4 teaspoon salt
- 1 pinch fresh ground pepper
- 1 tablespoon wine vinegar
Recipe
- 1 heat oil in nonstick skillet.
- 2 add onion and saute until softened.
- 3 add broccoli and water, then cover and cook.
- 4 stir in bell pepper, zucchini, and peas. then cover and cook about 2 min longer.
- 5 add the lamb, thyme, salt, and pepper to the vegetables.
- 6 saute until the lamb is browned, then stir in vinegar.
- 7 cook, stirring, until lamb is cooked through, about 2 minute.
