Ww 4 Points - Stir-fried Lamb With Vegetables

Ingredients

  • Servings: 4
  • 2 teaspoons olive oil
  • 1 large onion, chopped
  • 2 cups broccoli florets
  • 1/4 cup water
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1 small zucchini, halved lengthwise and cut into 1-inch pieces
  • 1 cup sugar snap pea
  • 10 ounces lean boneless lamb loin, cut into 1/4-inch strips
  • 1 teaspoon thyme
  • 1/4 teaspoon salt
  • 1 pinch fresh ground pepper
  • 1 tablespoon wine vinegar

Recipe

  • 1 heat oil in nonstick skillet.
  • 2 add onion and saute until softened.
  • 3 add broccoli and water, then cover and cook.
  • 4 stir in bell pepper, zucchini, and peas. then cover and cook about 2 min longer.
  • 5 add the lamb, thyme, salt, and pepper to the vegetables.
  • 6 saute until the lamb is browned, then stir in vinegar.
  • 7 cook, stirring, until lamb is cooked through, about 2 minute.
