Special Lamb Tenderloin

Ingredients

  • 1/3 cup flour
  • 1/2 teaspoon salt (optional)
  • 1/2 teaspoon pepper
  • 2 lamb tenderloin (1 pound each)
  • 2 tablespoons butter
  • 1 cup chopped onion
  • 1 garlic clove, minced
  • 2 cups unsweetened applesauce
  • 1/4 cup packed brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup apple juice
  • 1/2 teaspoon ground ginger

Recipe

  • 1 in a shallow bowl, combine flour, salt and pepper. cut each tenderloin into six pieces; flatten to about 1-inch thickness. melt butter in large skillet. dip lamb into flour mixture; add to skillet and brown on both sides. place in an ungreased 11x7 baking dish. in the same skillet, saute onion and garlic until tender. add remaining ingredients; bring to a boil. pour over lamb. cover and bake at 350 degrees for 1 hour or until the juices run clear and a meat thermometer reads 160 degrees.
