Turkey And Apple Salad Over Watercress

Ingredients

  • Servings: 4
  • 3 cups cooked turkey, diced
  • 2 apples, cored and diced
  • 2 cups celery, thinly sliced
  • 3 tablespoons fresh parsley, finely minced
  • 1/4 cup dried tart cherries or 1/4 cup dried cranberries
  • 2 cups watercress, washed and dried thoroughly
  • 3 tablespoons olive oil or 3 tablespoons grapeseed oil
  • 2 tablespoons fresh lime juice
  • salt, to taste
  • cracked black pepper, to taste
  • lime wedge
  • toasted slivered almonds (optional)

Recipe

  • 1 in a large bowl combine the turkey, apples, celery, parsley and dried fruit.
  • 2 arrange the watercress on a large serving platter.
  • 3 whisk together the dressing ingredients and pour over the turkey/apple mixture.
  • 4 arrange the salad mixture on top of the watercress.
  • 5 garnish with lime wedges and a sprinkle of toasted slivered almonds.
