Ingredients

- 1 lb ground beef
- 1 tablespoon vegetable oil
- 1 garlic clove
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 (16 ounce) can red beans, drained
- 2 1/2 cups tomatoes with juice, chopped
- 3/4 cup uncooked rice
- 3/4 cup grated cheddar cheese
- 1/4 cup sliced black olives
Recipe
- 1 brown beef in vegetable oil with garlic.
- 2 add the onion and green pepper;cook until onion is transparent. drain off fat.
- 3 in a 2 qt casserole, combine the meat mixture, salt, chili powder, beans, tomatoes and rice.
- 4 bake covered at 350 degrees for 30 minutes.
- 5 uncover and sprinkle with cheese and olives; bake for 15 minutes more.
