World's Best Bean Soup

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 2 cups dry 18 bean soup mix
  • 2 quarts water
  • 1 ham hock
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 large onion, chopped
  • 1/4 chili powder
  • 1 pint tomato
  • 1 garlic clove, minced
  • 3 tablespoons lemon juice

Recipe

  • 1 wash the beans and place in a dutch oven.
  • 2 cover with water and soak overnight.
  • 3 drain the beans and add the water, ham hock, salt and pepper.
  • 4 cover and bring to a boil.
  • 5 reduce heat and simmer 1 1/2 hours until beans are tender.
  • 6 add the remaining ingredients.
  • 7 simmer 30 minutes more, stirring occasionally.
  • 8 remove ham hock from the soup.
  • 9 remove from bone, chop and return meat to the soup.
  • 10 serve with your favorite homemade bread.
