World's Best Bean Soup

Ingredients
- Servings: 6
- 2 cups dry 18 bean soup mix
- 2 quarts water
- 1 ham hock
- 1 1/4 teaspoons salt
- 1/2 teaspoon pepper
- 1 large onion, chopped
- 1/4 chili powder
- 1 pint tomato
- 1 garlic clove, minced
- 3 tablespoons lemon juice
Recipe
- 1 wash the beans and place in a dutch oven.
- 2 cover with water and soak overnight.
- 3 drain the beans and add the water, ham hock, salt and pepper.
- 4 cover and bring to a boil.
- 5 reduce heat and simmer 1 1/2 hours until beans are tender.
- 6 add the remaining ingredients.
- 7 simmer 30 minutes more, stirring occasionally.
- 8 remove ham hock from the soup.
- 9 remove from bone, chop and return meat to the soup.
- 10 serve with your favorite homemade bread.
