Sweet Chili Lamb Lettuce Wraps

Ingredients

  • Servings: 4
  • 1 lb lamb tenderloin, trimmed, thinly sliced crosswise
  • 1 teaspoon baking soda
  • 1 teaspoon soya sauce, 30% less salt, divided
  • 1 tablespoon vegetable oil, divided
  • 1 tablespoon freshly minced ginger
  • 8 ounces mushrooms, sliced
  • 2 cups sliced red peppers
  • 4 green onions, thinly sliced
  • 1/4 cup sweet chili sauce
  • 1/4 cup water
  • 1 large head lettuce (boston or iceburg)
  • 1/4 cup seasoned dry roasted peanuts, chopped

Recipe

  • 1 in a bowl, combine lamb, baking soda, and soya sauce. set aside to marinate 5 minutes.
  • 2 in a large non-stick skillet, heat 1 teaspoons oil over medium-high heat. cook lamb until browned, about 3 minutes. transfer to a plate.
  • 3 add remaining oil to the skillet and cook ginger, mushrooms and red peppers until softened, about 3 minutes. add lamb, green onions, sweet chili sauce and water to the skillet. cook, stirring until the lamb is cooked through, about 4 minutes.
  • 4 spoon lamb mixture onto lettuce leaves, sprinkle with peanuts. roll up and enjoy with a side of rice or substitute flour tortillas for the lettuce wraps, if desired.
