Triple-onion Baked Potatoes

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 8
  • 4 large baking potatoes
  • 1 lb sliced bacon, diced
  • 1/2 cup finely chopped red onion
  • 1/2 cup finely chopped yellow onion
  • 1/2 cup sour cream
  • 2 tablespoons milk
  • 1 cup diced american cheese
  • 1/2 cup shredded cheddar cheese
  • 4 green onions, finely sliced

Recipe

  • 1 bake potatoes at 400º for 1 hour or until tender.
  • 2 meanwhile, in a large skillet, cook the bacon over medium heat until crisp; remove to paper towels.
  • 3 drain, reserving 1 tablespoon drippings.
  • 4 in the drippings, saute red and yellow onions until tender; set aside.
  • 5 when potatoes are cool enough to handle, cut in half lengthwise.
