Turkey Breakfast Tacos

Ingredients

- 1 lb turkey sausage, the breakfast kind
- 12 large eggs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cheddar cheese, shredded
- 1 cup salsa
- 6 large flour tortillas
Recipe
- 1 in a large non-stick pan, crumble and cook turkey until no longer pink, about 8 minutes.
- 2 remove from pan.
- 3 wipe pan clean with paper towel and reserve for cooking eggs.
- 4 break eggs into a large bowl and whisk until yolks and whites are well blended.
- 5 season with salt and pepper.
- 6 pour eggs into reserved pan and scramble until desired doneness.
- 7 in order, top each tortilla with turkey, cheese, eggs and salsa.
- 8 fold and serve.
