Ingredients
- 3 ounces boneless skinless chicken breasts
- 3 tablespoons plain nonfat yogurt
- 2 teaspoons low-fat peanut butter, creamy
- 1/2 teaspoon low sodium soy sauce
- 1/2 teaspoon rice wine vinegar
- 1/8 teaspoon garlic powder
- 1 dash ground red pepper
- 3 cherry tomatoes
- 1/4 cup snow peas, blanched (i don't blanch them)
Recipe
- 1 preheat broiler. place chicken in small broiler pan and broil 4 inches from heat until lightly browned, about 3 minutes. turn and broil until other side is browned and chicken in cooked through. about 2 minutes longer depending on the thickness of the breast. set aside to cool. cut into 1/2 inch diagonal slices.
- 2 to prepare sauce, in small bowl, whisk together remaining ingredients, except tomatoes and snow peas. and 1 teaspoon water. pour into small serving dish.
- 3 to serve, fan chicken and snow peas alternately on serving plate. add cherry tomatoes and sauce.
