Ingredients

- 4 (5 ounce) skinless bone-in chicken thighs
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 medium onion, halved and sliced
- 2 garlic cloves, thinly sliced
- 1 teaspoon fennel seed
- 1 teaspoon dried ancho chile powder
- 1 teaspoon dried oregano
- 1 teaspoon packed brown sugar
- 3/4 cup strong brewed coffee
- 2 teaspoons balsamic vinegar
Recipe
- 1 sprinkle chicken with garlic powder, salt and pepper.
- 2 spray large deep nonstick skillet with nonstick spray and set over medium-high heat. add chicken and cook, turning once, until browned, about 6 minutes. transfer to plate.
- 3 add onion, garlic, fennel seeds, chili powder, oregano and brown sugar to skillet and stir to blend. reduce heat to low, cover, and cook, stirring occasionally, until onion is tender, 8 minutes.
- 4 add coffee and vinegar and bring to a boil.
- 5 place chicken thighs on top on onion mixture.
- 6 reduce heat to low, cover, and simmer 10 minutes.
- 7 turn chicken thighs and simmer until chicken is tender and cooked through, about 10 minutes.
