Ww Coffee-braised Chicken Thighs

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 (5 ounce) skinless bone-in chicken thighs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 medium onion, halved and sliced
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon fennel seed
  • 1 teaspoon dried ancho chile powder
  • 1 teaspoon dried oregano
  • 1 teaspoon packed brown sugar
  • 3/4 cup strong brewed coffee
  • 2 teaspoons balsamic vinegar

Recipe

  • 1 sprinkle chicken with garlic powder, salt and pepper.
  • 2 spray large deep nonstick skillet with nonstick spray and set over medium-high heat. add chicken and cook, turning once, until browned, about 6 minutes. transfer to plate.
  • 3 add onion, garlic, fennel seeds, chili powder, oregano and brown sugar to skillet and stir to blend. reduce heat to low, cover, and cook, stirring occasionally, until onion is tender, 8 minutes.
  • 4 add coffee and vinegar and bring to a boil.
  • 5 place chicken thighs on top on onion mixture.
  • 6 reduce heat to low, cover, and simmer 10 minutes.
  • 7 turn chicken thighs and simmer until chicken is tender and cooked through, about 10 minutes.
