Ww Szechwan Lamb

Ingredients

  • Servings: 4
  • 2 teaspoons dark sesame oil
  • 1 lb lamb tenderloin, cut into 1 inch pieces
  • 2 teaspoons gingerroot, peeled and minced
  • 3 garlic cloves, minced
  • 1 medium sweet red pepper, cut into strips
  • 1/3 cup picante sauce
  • 2 tablespoons reduced-fat peanut butter
  • 1 tablespoon low sodium soy sauce
  • 2 cups cooked rice, hot
  • 1/4 cup scallion, minced

Recipe

  • 1 heat oil in a nonstick skillet over medium high heat. add lamb, ginger, and garlic; stir fry 1 minute. add bell pepper; stir fry 2 minutes. add picante sauce, peanut butter and soy sauce; sir fry 3 minutes or until lamb loses its pink color and sauce is thick.
  • 2 transfer lamb and rice to individual plates and top with green onions.
