Spinach Lasagna Roll-ups (meatless)

Ingredients

- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 cup part-skim mozzarella cheese, shredded
- 1 cup small curd cottage cheese, 2% fat
- 3/4 cup parmesan cheese, grated, divided
- 1 egg, lightly beaten
- 6 lasagna noodles, cooked and drained
- 2 (15 ounce) cans seasoned tomato sauce or 2 (15 ounce) cans spaghetti sauce
Recipe
- 1 in a bowl, combine the spinach, mozzarella, cottage cheese, 1/2 cup parmesan and egg.
- 2 spread a heaping 1/3 cupful over each noodle.
- 3 roll up and secure with toothpicks.
- 4 place seam side down in an 11 x 7 x 2 inch baking dish coated with non-stick cooking spray.
- 5 cover and refrigerate overnight.
- 6 remove from the refrigerator 30 minutes before baking.
- 7 pour tomato or spaghetti sauce over roll-ups.
- 8 cover and bake at 350 degrees fahrenheit for 33-38 minutes or until bubbly.
- 9 sprinkle with remaining parmesan cheese.
- 10 discard toothpicks.
