Spinach Lasagna Roll-ups (meatless)

Total Time: 48 mins Preparation Time: 10 mins Cook Time: 38 mins

Ingredients

  • Servings: 6
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup part-skim mozzarella cheese, shredded
  • 1 cup small curd cottage cheese, 2% fat
  • 3/4 cup parmesan cheese, grated, divided
  • 1 egg, lightly beaten
  • 6 lasagna noodles, cooked and drained
  • 2 (15 ounce) cans seasoned tomato sauce or 2 (15 ounce) cans spaghetti sauce

Recipe

  • 1 in a bowl, combine the spinach, mozzarella, cottage cheese, 1/2 cup parmesan and egg.
  • 2 spread a heaping 1/3 cupful over each noodle.
  • 3 roll up and secure with toothpicks.
  • 4 place seam side down in an 11 x 7 x 2 inch baking dish coated with non-stick cooking spray.
  • 5 cover and refrigerate overnight.
  • 6 remove from the refrigerator 30 minutes before baking.
  • 7 pour tomato or spaghetti sauce over roll-ups.
  • 8 cover and bake at 350 degrees fahrenheit for 33-38 minutes or until bubbly.
  • 9 sprinkle with remaining parmesan cheese.
  • 10 discard toothpicks.
