Super Tasty Italian Sausage Subs

Ingredients
- 1 tablespoon olive oil
- 2 italian sausages (i used becco's sausage which is locally made)
- 1 medium onion, sliced thin
- 1 red bell pepper, sliced thin
- 4 slices provolone cheese
- 2 sub rolls
- 4 tablespoons sun-dried tomato pesto
Recipe
- 1 heat olive oil in frying pan.
- 2 saute onion and pepper until onion is transparent and softened.
- 3 remove vegetables to a plate and set them aside.
- 4 add sausages to pan and fry on medium heat, turning from time to time, until sausages are no longer pink and are almost fully cooked.
- 5 return vegetables to pan with sausage and cook together until sausage is fully cooked.
- 6 meanwhile, spread 2 tbs. of the pesto on to each sub roll and top with provolone cheese.
- 7 place a hot sausage in sub roll and top with onions and peppers.
