Super Tasty Italian Sausage Subs

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 tablespoon olive oil
  • 2 italian sausages (i used becco's sausage which is locally made)
  • 1 medium onion, sliced thin
  • 1 red bell pepper, sliced thin
  • 4 slices provolone cheese
  • 2 sub rolls
  • 4 tablespoons sun-dried tomato pesto

Recipe

  • 1 heat olive oil in frying pan.
  • 2 saute onion and pepper until onion is transparent and softened.
  • 3 remove vegetables to a plate and set them aside.
  • 4 add sausages to pan and fry on medium heat, turning from time to time, until sausages are no longer pink and are almost fully cooked.
  • 5 return vegetables to pan with sausage and cook together until sausage is fully cooked.
  • 6 meanwhile, spread 2 tbs. of the pesto on to each sub roll and top with provolone cheese.
  • 7 place a hot sausage in sub roll and top with onions and peppers.
