Tender N Tasty Lamb Loin Chops

Ingredients

  • Servings: 6
  • 1 2/3 cups unsweetened pineapple juice
  • 1/3 cup rice wine vinegar
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 3 tablespoons chopped shallots
  • 4 garlic cloves, minced
  • 1 1/2 teaspoons salt
  • 1 teaspoon louisiana hot sauce
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon pepper
  • 6 lamb loin chops with bone (3/4 inch thick)

Recipe

  • 1 in a large bowl,combine the first 10 ingredients. place lamb chops in a large resealable plastic bag; add half the marinade. seal bag and turn to coat; refrigerate for 4-5 hours, turning occasionally. cover and refrigerate the rest of the marinade for basting.
  • 2 drain and discard marinade. grill lamb chops, covered, over medium heat for 8-10 minutes on each side or until a meat thermometer reads 160, basting occasionally with reserved marinade.
