Ingredients

- 1 2/3 cups unsweetened pineapple juice
- 1/3 cup rice wine vinegar
- 1/4 cup olive oil
- 3 tablespoons soy sauce
- 3 tablespoons chopped shallots
- 4 garlic cloves, minced
- 1 1/2 teaspoons salt
- 1 teaspoon louisiana hot sauce
- 3/4 teaspoon ground cumin
- 3/4 teaspoon pepper
- 6 lamb loin chops with bone (3/4 inch thick)
Recipe
- 1 in a large bowl,combine the first 10 ingredients. place lamb chops in a large resealable plastic bag; add half the marinade. seal bag and turn to coat; refrigerate for 4-5 hours, turning occasionally. cover and refrigerate the rest of the marinade for basting.
- 2 drain and discard marinade. grill lamb chops, covered, over medium heat for 8-10 minutes on each side or until a meat thermometer reads 160, basting occasionally with reserved marinade.
