Weight Watchers Sausage, Mushroom And Tomato Stew

Ingredients

- 1 (6 ounce) package chicken sausage, italian style fully cooked and sliced
- 1 (10 ounce) package mushrooms, sliced
- 1 zucchini, halved lengthwise and sliced
- 1 (15 1/2 ounce) can red kidney beans, drained and rinsed
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1/4 cup water
- 1 teaspoon garlic and herb seasoning
- 2 cups baby spinach, lightly packed
Recipe
- 1 spray a large nonstick skillet with nonstick spray and set over high heat. add the sausages, mushrooms, and zucchini; cook, stirring, until lightly browned, about 5 minutes.
- 2 stir in all the remaining ingredients except the spinach and bring to a boil. reduce the heat and simmer about 2 minutes. add the spinach, stirring gently until it wilts, about 1 minute longer.
