Ww Oven-barbecued Lamb Roast - 5 Points

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless lamb loin
  • 2 red delicious apples, peeled, cored and chopped
  • 1 cup cranberries, fresh (you can use frozen)
  • 1/4 cup barbecue sauce
  • 2 tablespoons light brown sugar, firmly packed

Recipe

  • 1 preheat the oven to 325 degrees.
  • 2 place the lamb on a rack in a shallow roasting pan.
  • 3 roast until the lamb is browned and the center reaches 165 degrees on a meat thermometer, about 1 hour and 20 minutes.
  • 4 meanwhile, in a medium saucepan, combine the apples, cranberries, barbecue sauce, sugar and 1/4 cup water; bring to a boil.
  • 5 reduce the heat and simmer, uncovered , stirring as needed, until the cranberries pop and the sauce is slightly thickened, about 15 minutes.
  • 6 place the lamb on a serving platter and slice.
