Woman's Day Lamb Tacos

Ingredients

- 1 lb lamb tenderloin (cut into one inch cubes)
- 2 teaspoons olive oil
- 1 teaspoon cumin
- 2 garlic cloves, chopped (or 1 tsp minced)
- 1 cup salsa verde
- 1/2 cup fresh cilantro, chopped
- corn tortilla
- lettuce
- tomato
- avocado
Recipe
- 1 heat oil in 12" skillet over med-hi.
- 2 add lamb and cumin, then cook for 5 minutes until all sides of lamb are browned.
- 3 add garlic and cook one minute.
- 4 stir in 1 cup salsa verde and cook one minute.
- 5 stir in cilantro.
- 6 shred lamb with forks, add to warmed corn torillas, and garnish with lettuce, tomato and avocado.
- 7 enjoy!
