Western Beef Rolls

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 2 lbs round steaks, 1/4 in thick
  • 1/4 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 2 tablespoons oil
  • 1/2 cup barbecue sauce, smokey
  • 3/4 cup water
  • salt, to taste
  • pepper, to taste

Recipe

  • 1 pound steaks to flatten; season with salt and pepper.
  • 2 cut each steak into 3 strips; sprinkle with onions and peppers.
  • 3 roll up beef enclosing peppers and onions; tie closed with string.
  • 4 heat skillet with oil to medium/medium-high heat and brown all sides.
  • 5 add bbq sauce and water.
  • 6 cover and simmer 1-1 1/2 hours until tender.
  • 7 serve over egg noodles or rice.
